I Interrupt This Endless Stream of Photo Documentation to Bring You...

my latest craving: Guacamole.

Last week I bought 5 avocados at the store.
I consumed one a day.
Today I bought five more.
Perhaps it's the California cuisine I'm missing?
Chipotle?
Friends eating with me AT Chipotle?
I dunno.
I don't make it fancy- I just throw in some lime juice and salt.
But with all my friends in Southern California,
someone must have an interesting twist I could try!

Here's your guacamole recipe forum...
What's YOUR favorite?

I add cilantro, minced garlic, minced onion, can of diced tomatoes (some cans already have jalepenos in them. That's even better) and anything else I happen to have on hand that "wants" to be guacamole. So I never make the same recipe twice, but it's always good!

For the record, it's 7:45 a.m. here in MN, and I am currently craving guacamole. What the heck!?!

Hi Jamie!!

My mom and I throw in our favorite salsa...like the southwestern black bean and corn salsa from Trader Joes is so good. Mix it up and it adds an extra punch! Also...fresh garlic is the best extra ingredient!!

Or perhaps you're pregnant ;)

Fast version: add your favorite FRESH salsa, some salt and pepper, fresh garlic or powder, a little lime juice and more cilantro if the salsa you use doesn't have a lot. Oh yes, and avocados.

Long version: 4-6 avocados, a couple of chopped/diced fresh tomatoes, about 1/2 red or white onion, as much cilantro as you like, 1 minced jalapeno, lime juice, fresh minced garlic, salt and pepper to taste.

An easy (but quite good) guacamole recipe. I've even made a few converts to the joys of guacamole with this one:
(note: there are no exact measurements to this recipe, it's all done 'to taste' but I'll try to give some approximate proportions)

3 avocados
1/2-ish cup La Victoria Medium Salsa (I just pour from the jar)
a generous spoonful of sour cream
a generous sprinkling of garlic salt

taste, adjust, taste again, taste a bit more . . . repeat as necessary

Hmmm... I wish I could tell you my recipe, but it's a timeless family secret!

P.S. Campus visits to the education department aren't the same without you :(

I couldn't resist. Let's hope it's just the nostalgia.
